Breaded Tofu Sandwiches

Ingredients
  

  • 1 pound firm tofu
  • ½ cup soy sauce
  • 1 inch fresh ginger sliced
  • 2 tbsp Panko breadcrumbs
  • 2 tbsp flour
  • 2 tsp coriander powder
  • 2 tsp Kitchen King masala
  • 1 tsp cumin powder
  • 1 tsp turmeric powder
  • 4 tbsp olive oil
  • 2 tbsp mayonnaise
  • 2 tbsp sriracha
  • 4 tortillas
  • cilantro leaves
  • bread and butter pickle slices

Method
 

  1. Drain the tofu and slice along the shortest axis into four slabs
  2. Marinate the tofu in the soy sauce and ginger for 15 minutes
  3. Mix the breadcrumbs, flour, and spices in a bowl
  4. Bring a pan to medium heat and coat in olive oil
  5. Coat each slab of tofu in the breading mixture and place into the pan
  6. Cook the tofu until the side face down is crispy, and then flip and cook the other side until it is also crispy
  7. While the tofu is cooking, prepare a sauce by mixing equal parts sriracha and mayonnaise
  8. Assemble sandwiches with warm bread or tortillas, sauce, pickles, tofu, and cilantro to taste
