Breaded Tofu Sandwiches

Ingredients
  

  • 1 pound firm tofu
  • ½ cup soy sauce
  • 1 inch fresh ginger sliced
  • 2 tbsp Panko breadcrumbs
  • 2 tbsp flour
  • 2 tsp coriander powder
  • 2 tsp Kitchen King masala
  • 1 tsp cumin powder
  • 1 tsp turmeric powder
  • 4 tbsp olive oil
  • 2 tbsp mayonnaise
  • 2 tbsp sriracha
  • 4 tortillas
  • cilantro leaves
  • bread and butter pickle slices

Instructions
 

  • Drain the tofu and slice along the shortest axis into four slabs
  • Marinate the tofu in the soy sauce and ginger for 15 minutes
  • Mix the breadcrumbs, flour, and spices in a bowl
  • Bring a pan to medium heat and coat in olive oil
  • Coat each slab of tofu in the breading mixture and place into the pan
  • Cook the tofu until the side face down is crispy, and then flip and cook the other side until it is also crispy
  • While the tofu is cooking, prepare a sauce by mixing equal parts sriracha and mayonnaise
  • Assemble sandwiches with warm bread or tortillas, sauce, pickles, tofu, and cilantro to taste
