Breaded Tofu Sandwiches
Ingredients
- 1 pound firm tofu
- ½ cup soy sauce
- 1 inch fresh ginger sliced
- 2 tbsp Panko breadcrumbs
- 2 tbsp flour
- 2 tsp coriander powder
- 2 tsp Kitchen King masala
- 1 tsp cumin powder
- 1 tsp turmeric powder
- 4 tbsp olive oil
- 2 tbsp mayonnaise
- 2 tbsp sriracha
- 4 tortillas
- cilantro leaves
- bread and butter pickle slices
Instructions
- Drain the tofu and slice along the shortest axis into four slabs
- Marinate the tofu in the soy sauce and ginger for 15 minutes
- Mix the breadcrumbs, flour, and spices in a bowl
- Bring a pan to medium heat and coat in olive oil
- Coat each slab of tofu in the breading mixture and place into the pan
- Cook the tofu until the side face down is crispy, and then flip and cook the other side until it is also crispy
- While the tofu is cooking, prepare a sauce by mixing equal parts sriracha and mayonnaise
- Assemble sandwiches with warm bread or tortillas, sauce, pickles, tofu, and cilantro to taste
